Method:
- Cut the cauliflower into bite-sized florets and place them in a large bowl. Rinse thoroughly with water and a generous pinch of salt. Let the florets soak in the saltwater for 3-4 minutes to remove any impurities.
- After soaking, discard the salt water, rinse the florets with fresh water, and drain completely.
- For the batter, combine equal parts of refined flour and cornflour in a bowl. Season with salt, black pepper powder, and Kashmiri red chilli powder. Gradually add water while whisking to create a smooth, semi-thin batter.
- Add the cauliflower florets to the batter and mix well, ensuring they are evenly coated.
- Heat oil to a moderate temperature (about 170°C). Fry the coated florets over medium heat until they turn light golden brown. Remove and place them on a sieve to rest for a few minutes while increasing the oil temperature slightly.
- Return the florets to the hot oil and fry them again until they are crispy and deep golden brown.
- Your crispy cauliflower for Gobi Manchurian is ready to use!

Sauce Ingredients:
- Oil (तेल): 2 tbsp
- Onion (प्याज़): ½ (chopped)
- Ginger (अदरक): 1 tbsp (chopped)
- Garlic (लेहसुन): 2 tbsp (chopped)
- Green Chilli (हरी मिर्च): 1-2 (chopped)
- Capsicum (शिमला मिर्च): ½ (chopped)
- Spring Onion Bulbs (हरे प्याज़ के बूते): 2 tbsp (chopped)
- Coriander Stem (धनिए की डंठल): ½ tbsp (chopped)
- Soy Sauce (सोया सॉस): 2 tsp
- Green Chilli Paste (हरी मिर्च की पेस्ट): Paste of 1-3 chillies
- Ketchup (केचप): 1 tbsp
- Red Chilli Sauce (रेड चिली सॉस): 1 tbsp
- White Pepper Powder (सफेद मिर्च का पाउडर): A pinch
- Salt (नमक): To taste
- Water (पानी): As required
- Corn Flour (कॉर्न फ्लोर): 2 tbsp
- Water for Slurry (पानी): 4 tbsp
- Fresh Coriander (हरा धनिया): A handful (chopped)
- Spring Onion Greens (हरे प्याज़ के पत्ते): A handful (chopped)
- Garam Masala (गरम मसाला): A pinch (optional)
Method:
- Heat a wok over high flame until hot. Add oil, followed by chopped onions, ginger, garlic, and green chilies. Stir and cook for 1-2 minutes on high flame.
- Add capsicum, spring onion bulbs, and coriander stems. Stir well and mix in soy sauce, green chili paste, ketchup, red chili sauce, white pepper powder, and salt.
- Pour in water as needed to create the sauce and bring it to a boil.
- In a small bowl, mix corn flour and 4 tbsp of water to prepare a slurry. Gradually add the slurry to the sauce while stirring continuously to thicken it.
- Add the fried cauliflower, fresh coriander, spring onion greens, and garam masala (if using). Lower the flame and toss the cauliflower to coat it evenly with the sauce. Avoid overcooking at this stage.
- Garnish with additional spring onion greens.
